Bagels and lox is a time-honored brunch dish that’s delicious and easy to make. All you need is your favorite bagels, cream cheese, and some cannabis oil and you’ve got an infused twist on a brunch classic! 

Why make edibles?

Variety is the spice of life, and there’s no better way to get variety in your cannabis consumption than with edibles.

True, edibles aren’t the fastest administration method for cannabis, but what they lack in speed they make up for with delicious flavors and long-lasting effects. Whether you enjoy smoking and want a break or dislike smoking and are looking for other ways to incorporate cannabis, edibles allow you to consume as much or as little as you need. 

Edibles are also discreet; no one will know you’re consuming cannabis if you don’t tell them. (If you’re making an infused dish to share, always tell your friends.)

Common mistakes with edibles 

  • Having too much at once. Edibles are processed through your digestive system and can take one to two hours to kick in and up to four hours to reach peak effects. During this time, THC molecules are converted into 11-hydroxy-THC, a metabolite that can be twice as strong as THC – which is why edibles can hit more powerfully than smoking. Start with a low dose and give it time. You can always take more later, but you can’t take less. 
  • Not storing your oil properly. Cannabis oil should be kept in an airtight container in a cool, dry place. Exposure to light, heat, and temperature swings can degrade the cannabinoids, which means your oil won’t produce the experience you’re looking for.
  • Not labeling edibles. It can be easy for someone to mistake infused cream cheese for regular – which can quickly lead to a bad time. Clearly label your infused creations, and store them out of the reach of pets and children. 

Dosing your edibles 

This recipe calls for cannabis oil and gives you room to decide how strong you want to make your cream cheese. The recipe calls for 5mL, but that is just a guide. You can go light and use a small amount of oil (say 2mL), or you can go heavy and add up to a 1 tablespoon of oil (15mL). Assuming a starting concentration of 15mg/mL, 30mg of THC over six bagels means each bagel  will have a serving of 5 mg, while using 1 Tbsp (15mL) of that same oil will give you 37.5mg per bagel. 

A much larger dose of THC will undoubtedly create stronger experience.If you’re new to cannabis consumption or edibles, always start with a low dose (~2.5mg of THC) and allow it to fully kick in (at least 2-3 hours) so you don’t overdo it, redose too soon, only to get too high and green out

How to make cannabis oil 

Cannabis oil is a staple of the stoner kitchen. It’s the basis of many great recipes and is easy to make in a large batch and store. 

You can make infused oil with any oil you have on hand, but most recipes call for olive oil, coconut oil, or MCT oil. 

The importance of decarboxylation 

Decarbing your cannabis is the most important step to making edibles. It’s not enough to just add weed into olive oil and call it a day – first, you must go through the decarboxylation process
During decarb, the acidic cannabinoids like THCA and CBDA are changed into THC and CBD, which are the compounds that make your oil or butter so potent. Without this step, you’ll be serving a dish of weed-seasoned bagels, with none of the intoxicating qualities of cannabis.

Instructions

  1. Slice each of the bagels in half 
  2. Finely chop your chives 
  3. Thinly slice the red onion
  4. In a bowl, combine your cream cheese and cannabis oil. Whip together or stir vigorously to combine. 
  5. Add the salt, pepper, and chives to the cream cheese mix and stir to combine.
  6. Evenly divide the cream cheese between the bagels. 
  7. Evenly divide the lox and add to bagels. Top with the onions and capers and enjoy!

To elevate this recipe, combine red onion with your favorite vinegar and let stand for one hour before adding to the bagels for a lightly pickled touch.
