How to make cannabis-infused coconut oil

Most edible recipes are technically two-step creations. First, you have to prepare the cannabis infusion and then incorporate that infusion into the final edible recipe. For most chocolate edible recipes, you’ll want to start with weed-infused coconut oil. 

If you are familiar with making other fatty-based infusions like cannabutter and cannabis olive oil, making coconut oil is a similar process.

The following weed themed chocolate covered strawberries recipe requires a Crockpot (slow cooker), but there are many other easy methods if you don’t have access to this equipment. Just replace the butter with an equal amount of coconut oil. 

Ingredients for cannabis-infused coconut oil

  • 7-14 grams of ground, decarboxylated cannabis 
  • 1 cup organic coconut oil

  1. Fill the slow cooker halfway with water.
  2. Turn the slow cooker on, and set the temperature to 160 to 190°F (70 to 90°C). If you don’t have specific temperature settings, you can use a thermometer to adjust.
  3. While the slow cooker heats up, add all the decarbed cannabis and coconut oil into a large mason jar. To reduce the sometimes powerful weed smell, seal with tight-fitting lids.
  4. Place the mason jar into the hot water bath and let simmer for two to four hours.
  5. ‘Burp’ the mason jar at hourly intervals to release any pressure.
  6. Using oven mitts, remove the jar from the hot water bath and set aside until cool enough to handle (10 to 15 minutes). The mixture should still be liquid but not too hot to handle with your bare hands.
  7. Strain the mixture into a second large mason jar to remove all unwanted plant material using a cheesecloth. Discard the cheesecloth and leftover plant material.
  8. Seal tightly and store in the refrigerator until ready to use.

Directions for edible chocolate-covered strawberries

  • Wash and dry strawberries, placing them on a clean paper towel until ready to use. Take the time to choose the ripest and most beautiful individual berries for dipping. Leave stems and leaves attached.
  • Line a baking sheet with parchment paper or a silicone mat.
  • Bring water to a boil in a double boiler. If you don’t have a double boiler, a heatproof bowl placed over a pot of water works just as well. Add all dark chocolate and cannabis-infused coconut oil into the bowl. Stir until completely melted.
  • Turn off the heat, but leave the bowl of melted chocolate over the hot water. This will keep it warm and easy to work with.
  • Using the stem and leaves as a handle, carefully dip one strawberry into the melted chocolate at a time. Roll side to side to cover all areas in chocolate. Take your time.
  • Place chocolate-covered strawberries on the lined baking sheet. Repeat with remaining strawberries.
  • In a second double boiler, melt the white chocolate until smooth.
  • Using a spoon or a spatula, drizzle decorative lines of white chocolate across all dark chocolate-dipped strawberries. Alternatively, you can dip berries in white chocolate and drizzle in dark chocolate. Just remember which chocolate contains the cannabis coconut oil.
  • Place the baking sheet in the refrigerator to harden the chocolate. Once hard, you can move strawberries into a storage container or a decorative tin until ready for use.
  • THC-infused Chocolate Dip Strawberries should be enjoyed within seven days and stored in the refrigerator.

Tips and common mistakes

  • Always decarb. If you neglect the critical decarbing step of edible making, you’ll be missing out on the full potential of the flower.
  • Always store in the refrigerator. Strawberries last for up to a week in the refrigerator. Refrigeration also ensures the chocolate dip stays snappy and hard.
  • Pat strawberries completely dry. After washing the berries, you’ll want to ensure they are completely dry before dipping them in chocolate. Leftover water could disrupt the chocolatey coating.
  • Experiment with other weed strawberry ideas: Dark chocolate not your favorite? Any melting chocolate will work. Try milk chocolate or doubling up on the strawberry flavor with strawberry chocolate. You can also sprinkle the just-dipped strawberries with toasted coconut, nuts, or other toppings.
